Monday Meal Planning & Home Update

Hey friends!

I hope all is well and you had a great weekend. Ours was filled with lots of milestones with regards to the house! I’ll get to that in a minute, but I wanted to share what’s for dinner this week:

Monday: Crock Pot Ribs & Salads

Tuesday: Chicken, Tomatoes & Arugula w/ Feta over Quinoa

Wednesday: Seared Salmon & Asparagus

Thursday: Flat Out Bread Pizzas

Friday: Wing it

On to this weekend….. we hit quite a few milestones with the house. I can’t believe how close we are to finally being able to move in. I’m also looking forward to not having to see Alfie in so much physical pain from literally breaking his back trying to get our house done.

I decided to forego my run this morning to give him a back rub JUST so that he could get himself out of bed. He works so hard, for that I love him dearly and I’m so extremely proud of his accomplishments.

Saturday morning was a big part of the weekend for us! We had our countertops installed. Here are the before pictures of the kitchen:

The crew came around 10:00 to do the install, and we couldn’t have been more excited but nervous all at the same time! I’m sure they were annoyed at all the pictures I was snapping, but

I want to do a scrapbook/slide show of the house and it’s progress for us to enjoy in years to come.

Of course Jake and Rango were up in their grill the entire time “supervising”. :)

Needless to say, we’re ready to move. Like right now.

Another milestone was finally putting in some of our appliances! We’ve had these appliance for ages, and it was so nice to actually see something as silly as the fridge being in it’s proper place to really get the energy going in our house. These small victories are exactly what we need to keep this locomotive in motion!

The journey has been a long one, and it’s not close to being over—even once we move there will be plenty of work that still needs to be done, but it feels good to know we’re almost at a point where we can actually live there.

Our final milestone of the weekend was buying our very first piece of furniture for the house. We went to look at this couch 3 different times. We measured every inch of the thing, as well as the space it’s going in, and since Alfie’s mom knows her furniture, and can tell if things are made well, are a good brand, are a reasonable price, etc. We asked her to come with us to look at it before we actually “took the plunge”. Needless to say, she loved it, Kenzer thought it was “so cool”, and so we said “YES!”, and this couch is officially ours:

Now we’ll at least have ONE thing to sit on when the time comes! :)

On a side note—I was invited to participate in a podcast for the Lifestyle Accountability Show recently, and I just recorded it this morning! I was nervous and excited at the same time. The show will air on April 19th, and I hope you guys will listen in! I’ll give you a link once it’s closer to the time.

How was your weekend?!

  2. Muahhh ha ha ha ha! I know why you’re eating that asparagus?!?!?! :P

And the construction looks phenomenal!!!!! One of my favorite things to do is to explore houses being built and image where I would put all the furniture. Of course this is also called trespassing, but hey…. If you don’t get caught, it’s not – right? LOL

    • No worries friend! :) I feel ya– they’re talking snow here tomorrow. I’m kind of over it now. Not a fan of running in freezing temperatures and wind.
